What the Fork is Molcajete - F&F Takes Cabo
Take a trip to the culinary unknown and separate yourself from the familiar and boring.
In my mind, the ‘familiar and boring’ are the Americanized tacos, burritos, and quesadillas we often consider Mexican cuisine. The complex and wide plethora of dishes that remain underground are expansive in ingredient variety, taste, and presentation and deserve to be unearthed.
Before coming to Mexico, I had only seen Molcajete once or twice in TikToks or Instagram reels, so when I glanced at the menu at Jazmin in San Jose del Cabo and saw the dish as one of the chef’s specials, I knew I had to try it.
Chicken Molcajete is a certifiable flavor bomb.
It was brought to me in a large mortar with the molcajete sauce still sizzling. One look inside the mortar showed me strips of chicken, grilled cactus, and grilled onion smothered in a dark and spicy sauce. I was also presented with fresh tortillas, rice, and refried beans, to make tacos from the molcajete.
Each bite was succulent and flavorful. The chicken was moist and held the flavor of the sauce. The grilled cactus offered a fresh and light counterpoint to the spicy molcajete.
My favorite part of this molcajete experience was putting the contents into taco form. Not only did this make the dish interactive and fun, but it also added an air of authenticity to the traditional Mexican flavors in the meal.
Chicken Molcajete is a dish that deserves to push aside ‘common’ Mexican foods and take the spotlight, because not only is it visually fun and interesting, but it’s also chock full of bold, new flavors that are anything but subtle.
